A Heritage of Craft

Siete Machos is not a newcomer to the agave spirits world — it is one of its oldest living institutions. Registered as a brand since 1930, it was recognized as a 'Famous Brand' by Mexico's Instituto Mexicano de la Propiedad Industrial (IMPI) in 2006. Six generations of farmers and mezcaleros have tended the agave fields that supply this brand.

What makes Siete Machos unique is its duality: the brand produces both tequila in San Juanito de Escobedo, Jalisco, and mezcal in Santiago Matatlán, Oaxaca. Two spirits, two regions, one philosophy — 100% organic, artisanal, and rooted in the land.

The heart of tequila country. The volcanic soils surrounding San Juanito de Escobedo in the Valles region of Jalisco provide the mineral-rich terroir that nurtures the Blue Weber agave to full maturity over 7–8 years. The altitude and climate produce agave with high sugar concentration, lending the tequila its signature floral complexity.

Here, Espadin agave grows in the dry, rocky terrain under intense sun, developing the deep, smoky character that defines artisanal Oaxacan mezcal. The Spirit

Produced at Destiladora de Agave Azul (NOM 1424). Organically cultivated Blue Weber agave, fertilized with vermicompost — no chemicals, no shortcuts. Autoclave cooking, roller mill extraction, stainless steel fermentation, and double distillation in stainless steel pot stills. The result: a blanco tequila of extraordinary floral complexity.

The Spirit

Espadin agave, naturally cultivated across six generations of family fields. Earth oven cooking imparts the traditional smoky character, followed by double distillation in copper alembic stills. Unaged, unfiltered — a mezcal of honest character and great body.

Both the tequila and mezcal of Siete Machos are produced without synthetic chemicals at any stage — from cultivation through distillation. The agave is fertilized exclusively with vermicompost, harvested by hand, and processed using methods that have been refined but never industrialized over nearly a century.

This is not a marketing claim; it is a production discipline maintained across six generations of farming families in Jalisco and Oaxaca. The vermicompost program — using worm-based composting to create natural fertilizer — closes the production loop: agave waste returns to the soil that grows the next generation of plants.

  • 30ml Siete Machos Mezcal Espadín
  • 30ml Campari
  • 30ml sweet vermouth (Carpano Antica or Cocchi di Torino)
  • Express orange peel

Method

Stirred, strained over a large rock. The smoke from the Espadín replaces gin’s botanicals and creates something entirely new.

  • 30ml Tequila Siete Machos
  • 45ml natural passion fruit syrup
  • 25ml fresh green lime juice
  • 15ml simple syrup
  • 15ml Controy orange liqueur
  • 1g activated charcoal

Method

Shake all ingredients vigorously, pour into an Old Fashioned glass with 3 ice cubes. Garnish with a large slice of dehydrated lime.

A refreshing, aromatic highball with pear, apple, and Angostura bitters.

  • 30ml Tequila Siete Machos
  • 30ml pear syrup
  • 60ml apple nectar
  • Tonic water (to top)
  • 5 dashes Angostura orange bitters
  • 1 blooming sprig of mint

Method

Add all ingredients except tonic and bitters to a glass with plenty of ice. Stir, then top with tonic water. Garnish with dehydrated grapefruit, mint, and finish with 5 dashes of Angostura bitters.
