Origin & Heritage

Hacienda Capellanía sits in the heart of Los Altos de Jalisco — the Golden Triangle of Agave. At altitude, the iron-rich red clay and cool highland temperatures produce Blue Weber agave of exceptional sweetness, fruit-forward character, and aromatic complexity.

Established September 11, 2003, the distillery is guided by the patriarchs Don David Contreras Valle and Doña María Luisa Oseguera — fourth-generation agave producers. Their method could be considered an art: agave plantings follow a determined orientation according to a strict ancestral lunar calendar, knowledge transmitted through generations.

150 hectares of agave. 120,000 bottles. Selected 8-year agaves, each one chosen by hand. French-designed bottles of contemporary style. A philosophy of total quality, focused on international markets from the start.

Four generations of knowledge. One lunar calendar. Every agave planted with precision — orientation, timing, and patience passed from hand to hand.

From Field to Bottle

Six stages shaped by four generations of highland know-how — from agave grown in red volcanic soil to spirit rested in American oak.

Highland Cultivation

Harvesting

Jimadores hand-cut the mature piñas. Selected by eye, generation after generation.

Autoclave Cooking

Stainless steel 304 autoclaves.

Fermentation

Express lemon peel, discard. Garnish: green olive stuffed with pickled jalapeño.

  • 60ml Fuentes Guerra Añejo
  • 10ml agave nectar
  • 2 dashes mole bitters

Method

Stir over ice. Strain into rocks glass over a large cube. Express orange peel over the surface.

The Paloma, elevated. The crowd-pleaser that no one can argue with.

  • 60ml Fuentes Guerra Reposado
  • 30ml fresh ruby grapefruit juice
  • 15ml fresh lime juice
  • 15ml honey-rosemary syrup
  • Top with dry tonic water
  • Pinch of pink Himalayan salt

Method

Shake all except tonic. Strain into tall glass over ice. Top with tonic. Garnish: grapefruit wheel, rosemary sprig.
